I called my doctor, and my villi have indeed improved. I DO have Celiac Disease, and the gluten-free diet IS working.
I did part of this post last night and saved it. Then completely forgot about it until I went to bed.
Food:
Breakfast:
Cabbage and cucumber salad
A Brat with mustard
Lunch:
Pad Thai with soup and salad at Exotic Thai
Snack:
Vanilla yogurt and almonds
Dinner:
A few pieces of chicken that my wife made
Half of a baked potato with cottage cheese, bacon bits, and butter
Green beans
A little more cottage cheese
Late night:
I was still hungry after dinner and I really wanted some cherries, but I was stupid and left them at work. So I ended up eating some Doritos and some hamburger with salsa and ranch with chips. Well played you idiot.
